Breakfast, to me, has been the hardest meals to replace with non-meat options. I’m so used to eggs, and always added bacon to everything. And since I also cut down on yogurt and milk, my options have become more limited. But now that I’ve cut these food groups out, I needed to find other ways to get creative. So on days I didn’t make smoothies for breakfast I found a great substitute. Oatmeal!
Here’s an easy 7-minute healthy breakfast option.
1 cup water
1/2 cup oats
Dash of salt
1-2 teaspoons honey
1 teaspoon cinnamon
1 tablespoon blueberries
1 tablespoon blackberries or raspberries
- Bring water to a boil
- Add a dash of salt
- Add oatmeal and stir for about 2-3 minutes
- Pour oatmeal into bowl, add cinnamon, honey and berries and mix together
Since I had some avocado spread leftover from last night’s falafel dinner I used that over some toast for a side and also cut up a banana. It’s a filling, healthy meal that doesn’t make you want to go back to sleep.
